Potato Soup Made Easy with Swanson Cream Starter
Winter is here, and noting warms a belly better than a bowl of creamy cheesy potato and ham soup. After receiving a free sample from Campbell's and Crowdtap, I had no doubt about what I would be doing with the Swanson Cream Starter and the Campbell's Creamy Poblano and Queso Cooking Soup.
To get started, I sauted red peppers, onion, and celery in some butter. I then added two cans of Swanson Chicken Broth and several cups of sliced potatoes. I boiled the potatoes until I could easily pierce them with a fork. In another smaller saucepan, I melted a stick of butter. To this I added about 1/4 cup of flour. I quickly stirred this together to create a roux. In the larger pan, I added the box of Swanson Cream Starter and the Campbell's Creamy Poblano and Queso Cooking Soup and stirred the soup until no lumps remained. I stirred in the roux next, being careful to continually stir to thicken everything nicely. Finally, I added in the diced ham.
This soup was raved about by my family. I will definitely be saving this recipe to make it again.
